Tabbouleh Salad

This is probably my favorite salad of all time. It is so healthy and filling. The longer this salad sits the better it tastes so don't be scared to leave it in the fridge for a week! I hope you enjoy!

4 bunches curly parsley
2 bunches of green onions (I sometimes substitute 1 large yellow onion or red onion..whatever you have on hand)
4 tomatoes
1/2 cup of Bulgar wheat #3 (I also sometimes substitute Quinoa as my mom has celiac disease)
2 large Lemons (fresh or in a bottle)
1/4-1/2 cup of olive oil
salt
red pepper flakes/ cayenne pepper

Boil some water on the stove and add the Bulgar wheat or Quinoa. Allow to boil for about 5-10 min until they are soft. Drain and add to the bottom of the bowl.

Cut up all the ingredients and put them on top of the Bulgar in a large bowl. I take about 1 to 1/2 teaspoons of salt and sometimes up to 1tb (the parsley and Bulgar really need it), add cayenne pepper to taste, add the olive oil and the lemon juice. Mix well and taste. You might need to adjust the oil or acid or the salt.

Put in fridge for at least 30min.  This should feed anywhere from 8-10 ppl if using as a side dish. We eat it a lot as a main course and it should feed about 4.
